Is there a way to change it to something like. This my ideal URL.

Not within the application no. If you write up your own modification possibly. I can only respond here what is in the application.

Sorry, I have to ask, is there a way to keep the product/cat titles "My Product 1" but when the spider URLs display as "My_Product_1"

A .htaccess rewrite or something?

You would definately want to look into mod rewrite and htaccess to do any modifications.
