| custom fields
Is there a way to have custom fields for the review or product submissions? I thought I saw it in the CP somewhere but can't seem to locate it.

Right in Admin => Edit Categories for each category you can define extra fields

Yep, I knew I saw it somewhere. Just couldn't put my finger on it again.
Question about this feature. If say I created a field called, I dunno "Miles Tested", I see it throws the data entered there when the product is uploaded in the info block for that product. If I wanted to find that field in the tmpl file, what would I be looking for? In other words, I know the field for manufacturer is called $manu and the field for title is $title. How do I know or how can I find what my newly created field is called?
Additionally, if I want to add the exact same field to all of my categories, is there a way to do that so the actual field name, not the field display text but the name of the field on the backend, is the same?

You can define an additional field to be shown on all subcategories when you create a new one for the parent category check the copy to all children checkbox and that will do it
In the template the variable is $numcustom etc and this is array data so its not something you can play with

As it is now there is room for 6 custom/additional fields - how can we add more than that? I want 11 ....
Add a new field type isnt working for some reason ...

That is the feature set of 4.0. This feature worked from what I have seen so not sure what your issue might be.

If your talking about searching no there is no specific field to call in the database because of how the specific information is stored. Those fields are not searchable they are simply fields that users can answer on upload or edit and they display underneath a photo.

No, I wasnt want to do searches ... I just wanted to be able to put in a variable and have it work like "$title" so that I could call that information in that cell into templates etc.

well those variables are printed from an array so the code you see in there is correct for those variables.
