Change the Default Products Per Page
How do I add or change the number of products that show up in the categories. Currently, the default is 12 and there are options for 12, 16, 20, 24.

Those are determined by your columns and rows settings for thumbnails. If you set to display 12 the default is 12 and it its rows of 5 and 20 it will do multiples of 5 so all up to you.
