Where can I find the upload photo table fields?

I would like to add to the field description in the upload table.

Where would I find this text "Enter a description for the photo(s)"

I've looked in the uploadphoto.php, pp-inc.php, as well as the database tables... cannot find where this text comes from.

There is no uploads table anywhere. I do not fully understand your question here. If you upload a photo you enter a description and that is stored in the photos table in the description field. Language strings are stored in the language file in the languages directory namely english.php
