Using Goddady as host?
 
I'm having issues with Godaddy.

I cant set the folder/file permissions to 777 for the /gallery/files/ directory, it keeps resetting to 000 through Filezilla.

Is it Godaddy? or something else?

I'm guessing its godaddy itself. My server (powweb.com) has a restriction, or will have, on setting files to 777. The most you can do now is set it to 755 and see if that works. Hope that helps

I did a google search:

"Ask godaddy to do: chmod -R 777 on your directory(s), they can solve it for you."
on a few 100 websites w/ 777 issues.
