The text for that is in your email phrases and it's called 'adv_gallery_ecard'.

Just a small question, what are the possibilities of adding a small thumbnail of the image within the email or would that be a massive work around?

Shouldn't be too hard, but not all email programs parse HTML. If you wanted to add it though it should only be a matter of modifying the query that grabs the image info when the card is sent and changing the phrase to include an image tag.
