Where do I change variables for new templates?

I read (and think I understood) the sticky on adding category templates.

Copied and renamed template sets and language sets. Found and changed the label on the language files. (Example: Changed Enter 0 for 'Best Offer' to 'N/A').

The new templates and category work, but when entering an ad in the new template, entering 0 still brings up the 'Best Offer' label. I need some help pointing me to the place I change the actual value of the variable for this template set.

Total php rookie, sorry!
