Any idea why my subcategories aren't showing up?

If you click on the main level categories, you just get a blank page...

You have defined a new template type without creating the necessary files

FAQ--How to Create Additional Template Set's in Classifieds

You can set them back to say for sale or some other template type that exists otherwise you must follow that thread and create new templates and language files
