| Items marked as SOLD
Are items automatically marked as SOLD when the classified expires? If so does the dollar value of that item automatically get added to the total $$ sold on the classifieds even if that item never sold but just expired?

No items are not marked sold when they expire. Only when they are sold are they marked sold.

Hmmmmm. Strange because every ad in my expired queue (just started running the cron job) shows sold and I highly doubt that is the case.

SOLD and expired are two separate things at least in 2.5.
It may say sold because it is expired and the front end will show sold if status is not equal to 0. However an ad is only sold as in the amounts added to the stats table if the owner of the ad marks it sold.

when an ad expires that was marked sold...does it remove it from the dollar amount count?
ie..the "items sold" and "value" counters in the summary....how do those go down?

why would they ever go down?
They only go down on one condition thats if you mark it sold by mistake or the buyer backs out you can hit resell

All ads show SOLD when they simply expire (I'm using 2.5). It's nice that they expire but I get many confused sellers wondering why their ad says SOLD when it simply expired. Is this something configurable?

That would be a vast improvement.
