does gallery allow to post movies..?
if so doeas it create thumbnail ?
if not is it possible ?

Yes, you can post movies in the Gallery if you add their file extensions in your ACP. By default a generic icon will be displayed for them but there is a hack available to play them inline.

It does not create a thumbnail for any non-image file.

One more question, is there a way than to associate an IMG file to a movie?
I would make thumbnail on my own.

With media files (or any type of file that a thumbnail can't be created for), a default image is used in place of the thumbnail, so it's very easy just to replace that image.

Along these same lines, is it possible to use a different thumb image per category?

Yes, each category can be assigned a totally unique image. There are two ways of assigning an image to a category, either through the Gallery CP and then editing the category's properties or when viewing an image if you choose Image Tools there is an option to make the thumbnail for the image that you're currently viewing to the be category's image.
