ReviewPost Fields

I want to use Review Post to review different kinds of businesses.

In addition to a general description, I would like to create fields for information such as address, phone number, etc. How many of these fields can I have? Are these fields searchable?

I also need to asssess the number of copies of ReviewPost I may need per website.

Can the fields change for different categories, or do they need to stay the same throughout each copy of PhotoPost? For example, local stores might include fields for physical addresses. Online stores might have email addresses instead. Can I do this with one copy of Review Post, or will I need two (One for local stores and one for online stores)?

There are 6 additional fields which can be set per category. I believe you can do this with one using different categories.
