Reviewpost customization?

I see that the the reviews can be sort by a bunch of criteria but I can't find it
sort by most or least number of reviews.
How easy is it to hack that function in?

Also, instead of a pull down menu for sort, how easy is it to program the sort functions into the column headers itself; for example, a click on the ratings header column would sort the listings by ratings desc, another click on the same header would list it by ratings asc.

Not hard at all, they are simple lines in a sort table in the database. You could simply add the ORDER BY into the table to make it available.
