I have never seen or heard, that people started working there on a Sunday. Because of religious reasons, many people worked on a Sunday instead of on a Saturday (not in banking though), but I would be surprised, if Monday would be for 80% of the US citizens the first day in the working week

Even Hongkong/China, which is famous for working 7 days a week as a common habit, the week "starts" on a Monday...
