The adv_gallery_imagebit template is used to display all thumbnail listings, including newest and random.
There is an if condition there (<if condition="$show['category']">) to display the category but there isn't a on/off selector on the administration area like the ones used with the other fields (description, size, etc).
Result? It displays the category permanently in the newest and random image blocks.
